Job Title: Meat Market Manager Department: Meat Markets Reports To: Regional Manager Location: Assigned Meat Market Branch

Purpose of the Role

To manage the overall operation of the Meat Market, ensuring profitability, excellent customer service, compliance with food safety and hygiene standards, stock control, people management, and achievement of all operational targets.

What you'll doKey Responsibilities:

Butchery Operations Manage the day-to-day operation of the Meat Market.

Perform and supervise meat cutting, portioning, processing, and wors production.

Ensure products meet company quality and presentation standards.

Maintain product availability and freshness at all times.

Ensure equipment is used safely and maintained correctly.

Financial and Stock Management Achieve sales, GP%, waste, shrinkage, and profitability targets.

Control stock ordering, receiving, storage, and stock rotation.

Monitor and reduce waste, damages, and stock losses.

Conduct stock counts and investigate variances.

Food Safety and Compliance Ensure full compliance with food safety, hygiene, and health & safety standards.

Maintain high housekeeping and cleanliness standards.

Ensure employees wear the correct PPE and follow safe working practices.

Team Leadership Lead, motivate, and manage the Meat Market team.

Monitor attendance, productivity, and performance.

Train and develop employees in both butchery and operational standards.

Address performance and disciplinary matters where required.

Customer Service Deliver excellent customer service and product knowledge.

Resolve customer complaints professionally and promptly.

Ensure a positive shopping experience through quality products and service excellence.

What you bringSkills and Qualities Required The ideal candidate must demonstrate:

Strong meat cutting and butchery skills.

Ability to manufacture and quality-check wors and value-added products.

Sound knowledge of meat specifications, yields, and product quality.

Strong leadership and people management abilities.

Good planning, organizing, and problem-solving skills.

Financial and commercial awareness. Ability to manage stock, waste, and profitability effectively.

High attention to detail and compliance standards. Good communication and customer service skills.

Ability to work under pressure and meet operational targets.

A hands-on management style with the ability to lead by example.
